Kingston has a good range of places to eat, whether you're seeking stately meals in plantation houses, hotel buffets, or fast-food shops.

After the sun goes down, the Kingston area is hard to beat for open-air eating. Uptown – which is where you'll want to be in the evenings – you'll find a wider choice of restaurants than anywhere else in Jamaica and an excellent standard of food. Most places offer variations on traditional Jamaican fare, but you'll also find good Chinese, Indian and Italian cuisine. If you want a meal with a view, head to Port Royal for the waterside restaurant at Morgan's Harbour hotel or any of the fish places dotted around the village.

For informal lunches, head to the food courts at Sovereign Centre in Hope Road, Island Life Plaza on St Lucia Avenue, the huge Marketplace complex in the Constant Spring Arcade or the two Manor Plazas on Constant Spring Road. If you're after truly authentic jerk chicken, try any of the smoking oil-drum barbecues set up on street corners.

It is easy to find this restaurant based on its central location. The dining area is simply furnished, and the atmosphere is perfumed by the unmistakable odor of jerked chicken and jerked pork. Chelsea has perfected the age-old Jamaican technique of preparing chicken and pork on a special grill. The meat is pre-seasoned with a combination of herbs and spices to give a distinctive taste. The meat is served with bread or festivals, made from flour, cornmeal and sugar. Alcoholic and non-alcoholic drinks are available.

This is the city's most popular purveyor of jerked meats. Set in a low-slung angular concrete building, it offers food to take out or eat in a comfortably battered dining area. Although no formal appetizers are served, you might order a side portion of what the scrawled-on chalkboard refers to as "festival" (fried cornmeal dumplings). The best bargain is Chelsea's Special: rice, peas, and vegetables, plus jerked pork or chicken. Remember to order the various components of your meal at different kiosks in the huge hall; oxtail, stewed fish, and beer are also available.

The food is what you'd be served in a typical Jamaican home-nothing fancy, but satisfying and filling-and the prices are astonishingly low.

Indies, an informal neighborhood restaurant across the street from the Indies Hotel, was designed around a garden terrace. You can also dine in the inner rooms, haphazardly but pleasantly decorated with caribou horns, tortoise shells, half-timbered walls, an aquarium sometimes stocked with baby sharks, and even a Canadian moose head. There's a full sandwich menu at lunchtime. In the evening you can enjoy grilled lobster, fish and chips, barbecued chicken or pork, chicken Kiev, or roast beef. It's a little better than standard pub grub. Pizza is a specialty. A bottle of Red Stripe, the Jamaican national beer, is the beverage of choice here.

Vogue Magazine called restaurant owner/chef Norma "the Julia Child of the Caribbean." Norma developed her culinary reputation at her original location on the island's north coast. She now does her magic at the famous Devon House. White tables fill the terrace overlooking the beautifully landscaped lawns of the great mansion. The menu consists of creative local and regional dishes, along with natural fruit juices and traditional desserts. The Jerked Chicken Penne with sun-dried tomatoes, roasted garlic and a light marinara sauce has won wide acclaim.

Frommers:

This is the creation of Jamaica's most famous businesswoman, Norma Shirley, purveyor of food to stylish audiences as far away as Miami. It's housed beneath the wide porticos of the gallery surrounding Kingston's most famous monument, Devon House. Ms. Shirley has taken the old, woefully dusty gardens and transformed them into something you'd find on a manicured English estate. Menus change with the season, but usually reflect Ms. Shirley's penchant for creative adaptations of her native Jamaican cuisine. Stellar examples include Jamaican chowder with crabmeat, shrimp, conch, and lobster; grilled whole red snapper encrusted with herbs and served with a thyme-and-caper sauce; and grilled smoked pork loin in a teriyaki/ginger sauce, served with caramelized apples.

In a formal, intimate setting, you can dine on a refined cuisine beneath paintings by prominent Kingston artists. The chef's specialty is "Port Royal," a plate of snapper, salmon, jumbo shrimp, and lobster sautéed just right in a white-wine sauce before being served with a saffron sauce. Snapper often appears as a separate main course in either a butter sauce or a sauce sprinkled with slivered almonds. The name alone lured us to this elegant place, which is the only restaurant in Kingston with cuisine as good as Norma's on the Terrace. A spinach callaloo with cream cheese is encased in a divine strudel. Seafood pasta is laden with shrimp, lobster, and salmon in a creamy coconut sauce.
